In Tallinn’s Rotermann Quarter, FUME, the newest expression of the Siigur Restaurant Collection, stands as a meeting point of fire, craft, and creativity.
Here, chefs Heinrich Liis and Tõnis Siigur reimagine Estonian gastronomy through the poetry of flame, transforming raw ingredients into stories told through smoke, texture, and time. For this exclusive collaboration, their creations rest upon 101 Copenhagen’s handcrafted dinnerware, pieces shaped by the same philosophy of imperfection and form. Each plate becomes a living canvas, its soft silhouettes and tactile glazes embracing the intensity of fire and the delicacy of craft. A seared scallop on raw porcelain, smoke curling over stoneware, a flicker of candlelight caught in a glazed curve, moments where design and gastronomy dissolve into one sensory language.
